I wasn’t playing! Nourish bowls really will be my meal M.O for the month of January, maybe beyond if I can keep it up. Last week’s beauty consisted of:
1. Quinoa cooked in stock for 20mins
2. Chickpeas fried with onions, garlic, fresh chilli, cumin and paprika
4. Hummous dressing; hummous, water and lemon juice. Just keep adding and stirring till you like the taste and consistency.
5. Sliced radishes, a bag of salad and sprouts as a topper.
I cooked, packed and carried this into work on Monday and was good to go for 3 days.
And there you have it. A well balanced, vegetarian lunch that’s bloody delicious!
